BACON JAM RECIPE

I had never heard of Bacon Jam until my brother told me he had made it and loved it. That was over a year ago and once more I’m wondering why I waited goodbye to form it!

It has a delicious unique flavor which will compliment many foods also as being fantastic all by itself as an appetizer. This recipe is formed within the Crock Pot , which made me extremely proud of the warmth and humidity we’ve been having.

BACON JAM RECIPE

INGREDIENTS :

  • 2 medium onions diced small
  • 1/2 cup Apple cider vinegar
  • 2 Teaspoons minced jarred garlic or 3 cloves garlic peeled and smashed
  • 1 1/2 pounds Applewood Smoked Thick Cut Bacon cut into one inch pieces
  • 1/2 cup dark brown sugar
  • 1/4 cup 100 % maple syrup
  • 3/4 cup brewed coffee
  • 1 Teaspoon red pepper flakes

INSTRUCTIONS :

  1. Place the bacon pieces in a large skillet, cook until light brown. Drain bacon on paper towels and set aside.
  2. Drain all but one Tablespoon of bacon grease from the pan. Add the garlic and onions to the pan and cook until soft.
  3. Add the vinegar, maple syrup. brown sugar and coffee to the skillet with the onions and garlic. Bring mixture to a boil, stirring and scraping the bottom of the pan to release the bits on the bottom. Add the bacon and pepper flakes to the pan and stir.
  4. Place the mixture into a 6 quart crock pot. Cook on high heat, uncovered for 3 - 4 hours until the liquid becomes syrupy.
  5. Transfer the mixture to a food processor and process until it's coarsely chopped. Let the Bacon Jam cool, refrigerate in a covered container for up to 4 weeks.

The bacon, the sugar, the chicken; this recipe has got to be the motherlode of all appetizers! They're filled with flavor, sweet from the sugar, salty from the bacon, plus I generously seasoned them with some fresh cracked pepper.

This recipe only involves a couple of ingredients! It’s amazing how just a couple of items from your kitchen can make something so delicious. 

BACON WRAPPED CHICKEN BITES

INGREDIENTS :

  • 1/2 tsp salt or to taste
  • 1 tsp pepper or to taste
  • 12 slices bacon thin cut, cut into halves or thirds
  • 3/4 cup dark brown sugar packed
  • 2 chicken breasts boneless and skinless, cut into 1 inch cubes
  • 1 tbsp parsley for garnish

INSTRUCTIONS :

  1. Preheat oven to 350 F degrees.
  2. Cover a baking sheet with aluminum foil, this will save you from having to scrub your baking sheet. Place a cookie rack on top the baking sheet. I used a cookie rack here. Place the sugar in a shallow plate.
  3. Season chicken pieces with salt and pepper.
  4. Depending on your bacon how thin or thick it is, cut each slice in either half or 3 pieces. I cut mine into 3. Wrap each piece of chicken with a piece of bacon. There is no need for toothpicks, the bacon will stick to the chicken. Roll the wrapped chicken into the brown sugar and make sure each piece is nicely coated in the brown sugar.
  5. Place chicken pieces on the prepared baking sheet and season again with more salt and pepper.
  6. Bake for about 45 minutes or until bacon is nice and crisp.
  7. Garnish with parsley, so that it looks pretty.

  • 1/3 c bacon bits we used real bacon bits
  • 1 c cheddar cheese grated
  • 1/3 c parmesan cheese
  • 3 chives diced, optional
  • 3 medium potatoes russet

INSTRUCTIONS :

  1. Wash potatoes. Leave the skin on and dice into approx. into 1" pcs. 
  2. Put them inside your Instant Pot and sprinkle your powdered ranch dressing mix on top of them. (alternatively to get them all really coated put potatoes and dry mix in a bowl and mix to coat and then add into your pressure cooker.)
  3. Sprinkle your bacon bits on top of that and pour your chicken broth over everything.
  4. Close your lid and steam valve and set to pressure high for 7 minutes. (timing may vary slightly depending on how large you cut your potatoes, keep them bite size)
  5. Do a quick release.
  6. Lift lid and sprinkle parmesan cheese, then grated cheese over your potatoes. Put lid back on for a few minutes so cheese can melt.
  7. Lift lid, gently stir and serve!!

INSTRUCTIONS :

  1. To make the dough. In a medium bowl, combine the flour, salt, butter, yogurt, and egg, and mix until combined. Knead the dough for 2-3 minutes. Cover and let sit 30 minutes.
  2. To make the filling. Bring the potatoes to a boil in a large pot of cold water. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.
  3. Drain the potatoes, return the potatoes to the pot and mash over low heat, adding the butter, cheddar cheese, and cream cheese. Season to taste with salt and pepper. 
  4. Roll the dough out onto a floured surface to 1/8 inch thickness. Using a biscuit cutter, cut out 3-inch circles. Spoon 2 teaspoons of filling into the center of each round. Brush the edges with water and fold half of the dough over the filling to enclose it. Press down the edges to seal, pressing out all the air. Be sure to keep the dough covered as you work to prevent from drying out. At this point, the pierogi can be flash-frozen on a baking sheet for 30 minutes, then transferred to a freezer bag and frozen for up to 3 months. 
  5. When ready to cook, bring a large pot of salted water to a boil. Boil the pierogies in batches for 2-3 minutes, or until they float. Drain.
  6. To make the butter sauce, cook the bacon in a large skillet over medium heat until crisp. Drain onto a paper towel. Wipe the skillet clean, then set back over medium-high heat and melt 1 tablespoon butter. Add the onions and cook 5 minutes, until softened. Add the apple cider, season with salt and pepper and continue cooking another 5-8 minutes, until the cider has evaporated and the onions are golden and caramelized. Add the remaining butter and thyme and cook 2-3 minutes, until the butter is browned. Remove from the heat.
  7. Drop the pierogies into the sauce, gently tossing to combine. Spoon the pierogies and onions onto plates. Top with cheddar and bacon. EAT!

INSTANT POT

  1. Combine the potatoes and 1 1/2 cups water. Cover and cook on high pressure/manual for 12 minutes. Once done cooking, use the natural or quick release function and release the steam. Drain the potatoes well.
  2. Finish as directed above from step 3 on.

  5. Add the diced onions to the pan with the ground beef and stir well.
  6. Continue cooking for a few minutes, stirring occasionally.
  7. Remove the pan from the heat and add bacon bits, mayo, ketchup, mustard, salt, pepper and onion powder. Stir well.
  8. Spread 6 of the slices of bread with 1/4 cup of the margarine and then cut them in half.
  9. Lay the pieces of bread, margarine side down, in a greased 9 x 13 inch baking dish.
  10. Sprinkle 2 cups of the cheese on top of the bread.
  11. Spoon the meat mixture on top of the cheese and spread it out evenly.
  12. Sprinkle the remaining 2 cups of cheese over the meat.
  13. Spread 6 more slices of bread with 1/4 cup of margarine and cut them in half as well.
  14. Lay the pieces of bread, margarine side up, on top of the casserole.
  15. Place the dish in the oven and bake until the top bread is golden brown. 20-24 minutes.
  16. Serve and enjoy
